After playing in the kitchen for about two weeks,
I finally perfected my
Banana Coconut Protein Bread Recipe!
I am extremely proud of this recipe so take good care of her <3
Without further stalling...
Banana Coconut Protein Bread
Ingredients:
Vanilla Protein Powder: 1/4 Cup
(I used NeoCell French Vanilla)
Coconut Flour: 1/2 Cup
2 Whole Eggs
4 Egg Whites
Stevia: 1/4 Cup
1 Tbsp Coconut Extract
1 Tbsp Vanilla Extract
1/2 of a Toasted Coconut Oikos Greek Yogurt Single Serving
1 Smashed Banana
Organic Unsweetened Coconut Flakes: 1/4 Cup
Water: 1/4 Cup
1/2 Tbsp of Baking Powder
Water: 1/4 Cup
1/2 Tbsp of Baking Powder
Directions:
Mix all of the ingredients until the batter is smooth. Once the batter is ready, pour it into a small bread tin. Bake at 350 degrees for 50 min.
Nutrition:
Based on the ingredients above I calculated that the whole loaf comes to approximately 800 Calories.

OMFG!!!!!!!!!!!!!! YOU REALLY DID perfect that bad boy! I remember I was making a "pumpkin loaf" for a little while... I sort of perfected it when I was at home over the holidays, but then when I came back to LA, yeah... it turned into a SMASHING PUMPKIN disaster! LOL! Oh and... Even though it looked like a big pile of cow poop, I did eat the whole thing and... gave myself a painful tummy ache - LOL! Too much fiber ain't always good!
