Slender Sunday Batch Cooking!
Well, after my fabulous workout this morning it was time,
yet again for another Sunday trip to Trader Joe’s. Now my menu this week may seem pretty simple
and not so exciting. The reason for
this, to put it simply is…
In just a few day’s (10 days to be exact!) I will be off to
some Sun, Beach and Drinks!
Therefore, I need to stay focuded so that bikini
in the corner of the room doesn’t seem so scary!!
Menu
- Breakfast: Will either be a veggie omelet or oatmeal & fruit
- Snack: Grapefruit & Splenda
- Lunch: TIU Recipe, Chickpeas, almonds and veggies
- Snack: Think Thin Bar
- Dinner: Tofu Stir Fry
Incase you haven’t been keeping track, it has been yet another week of
meat free dining!
To tell you the truth, the switch hasn’t really fazed me
much. I used to eat chicken basically
everyday, twice a day. In place of
chicken I swapped for tofu or shrimp, and it’s been satisfying me just
fine! I’ve also noticed that my skin has
actually begun to clear up, which is always a benefit!
The hardest part I’m sure will be when I’m away! Typically
when you go on a vacation you eat out basically 80% of the time right? Well, my
goal is to stay focused and make smart decisions! Don’t get me wrong, I WILL be
enjoying myself… but I need to find a balance J. I’ll write a post later on this week a little
more on this topic!
